Also, consider taking a close inventory on those cloths just to be sure that none of them disappear during the year (though some will be thrown away). If you have just opened up your restaurant, contact your food supplier and ask where you can buy bulk cloths. While these suppliers don’t usually sell them, they can easily send you to a place that does (or, you can just look in your local Yellow Pages).
